Akron Ale Fest Featured Brewery: The Butcher & the Brewer

Who are you and what is your role at the brewery?

 My name is John McGroarty and I'm in charge of brewing operations and all things BEER!

Where did the idea for your logo come from?

Seeing as we have a brewery and a butchershop within our building, we wanted to make sure that both facets were integrated - so the Hop Hog does a good job of showcasing both.

What is your favorite seasonal beer that's been released at your brewery lately?

We're getting ready to release our German Festbier and its a style I'm quite fond of, but aside from that our Barrel Talk Series is our line of mixed-culture saisons.  It would have to be one of those two, but its hard for me to choose favorites.

What is your favorite thing in your brewery? 

Tough question, but Id have to say the lagering vessels we use as serving tanks.  The design allows for the beer to clear quickly and allows us to steer clear of finings and filters.

What is your most recent milestone?

Getting our barrel program running.  Coming from a production background, we always had excess space for barrels and racks running to the ceilings - at B&B, we're cramped for space and don't have the ability to stack more than 2 levels, so we lots of thought goes into where/why each barrel is where it is.

What is your next major goal for the brewery?

We're working on our 3rd and 4th locations.  Hoping to have more news soon!

Lion, wolf, or dragon who will win and why?

That's pretty easy.  Dragons can fly, spit fire, and have nearly-impermeable scales.
